Mango feta pine nut salad with only 3 ingredients ? Ready in 10 min? Fresh and vegetarian? My recipe for you!

Hey guys,


we have really hot summer days here in Europe. Therefore I have the ultimative matching recipe for hot summer days. Lunch or dinner ? It is your choice to make ! 

Thanks to my brother in law which gave me this easy and really healthy recipe some time ago I can share it now with you.

I introduce to you the super yummy mango-pine nutes - feta salad. 

The ingredients for 2 persons:

1 Mango

Olive oil, black pepper and salt 

YAAASSS thats it ! 

I would recommend you to buy only bio products as this recipe only consists of 3 ingredients. The more quality you buy the better the taste will be at the end. That simple. 

Healthy facts about this dish (as it is so quick to prepare you should read more about the nutritions):

Mango is a low calorie fruit that is high in fibre, and is a great source of vitamins A and C. It also contains folate, B6, iron and a little calcium, zinc and vitamin E. Mangos are a very good source of antioxidants by the way (think of your skin glow!). 

Feta is a brined, white cheese with a soft and creamy texture. Compared to other cheeses, it's low in calories and fat. Ideal for your Bikini body :-)
It also contains a high amount of B vitamins, phosphorus and calcium, which can benefit bone Health. 

Now we come to my favorite nut, the pine nut. Studies show that eating tree nuts about five times a week can help lower the risk of death due to heart disease. Like other nuts, pine nuts are high in beneficial monounsaturated fats, magnesium and vitamin E, which work together to protect the heart.

Summarized for now you do something for your skin glow, bikini body and at the end protect also your heart. 

No excuses ! Get your things together and go grocery shopping ! You will not regret to eat this ! I promise :-) 

Method:
1. use a sharp knife or a special peeler for cutting and peeling the mango. Cut the mango in small pieces. 
2. Roast the pine nuts in a pan. They should get a nice little tan. Be careful not too much heat as they burn real quick. Put them aside on a plate so they can cool down.
3. Cut the feta into small pieces.
4. Mix the mango, feta all together. Add a little (only a little!!) olive oil, some black pepper and some salt and mix it all together. 
5. Sprinkle the pine nuts at the end and mix it again.

Orange Carpaccio, recipe, my insights for you!

One of my favorite recipes for this time of the year, a great, easy to make and healthy appetizer.

its that time of the year again, Christmas is about to come and finally time to spend some time with your loved ones. And what is better then to have dinner with family and friends?

I got this recipe from a friend of mine, which visited Stockholm recently for travel and got this dish in a restaurant while exploring the city. 

This home made recipe is just easy to prepare and you also get extra credit points as normally no one ever tried it before. Beside that recipe is easy to make and needs only really good and fresh ingredients theres nothing more really to have in mind.  Thanks to the oranges, it gives you an extra vitamin fill up for the cold winter times. 

Carpaccio - an Italian dish- was invented at "Harrys Bar" in Venice back in 1950. Normally Carpaccio is a dish of raw meat or fish, thinly sliced or pounded thin and served mainly as an appetizer. This recipe is the vegetarian alternative for you, even if you are not a veggie (I totally love Carpaccio also with beef) it is just a great option to check out. 

For the ingredients please only buy and use really the best you can get, as this dish taste is living threw the high quality of the ingredients I would recommend you to only buy bio orange, basil and only - really ONLY - buffalo mozzarella. Once again its all about the taste. 

Ingredients Orange Carpaccio (2 persons)
1 tea spoon salt
1 tablespoon freshly ground black pepper
2 tablespoon olive oil 
1 tablespoon of balsamic vinegar
1/2 bunch fresh basil, leaves only
250 g of buffalo mozzarella
2 big oranges 

Directions
1. cut of both ends of the oranges, start removing the orange peel running your knife along the sides, turn the orange upside down and remove any white membrane that is still attached to the orange. Then slice the orange into very thin slices. Prepare the slices on a large serving platter.

2. cut the buffalo mozzarella into small pieces.

3. place mozzarella slices on the orange carpaccio.

4. combine oil, balsamic vinegar, salt and pepper in a jar with a tight-fitted lid, shake well. Drizzle over oranges and mozzarella; sprinkle with the fresh basil leaves.

5. Depending on your taste you can also add some more freshly grounded black pepper over the orange carpaccio.

6. Enjoy your appetizer. I serve along Italian bread, ciabatta, and a great match is rose wine.

Part 3 I SURF HOUSE BARCELONA

I decided to do a series of the top foodie places when traveling to wonderful Barcelona. 

My insights about foodie places you should go to started two weeks ago, so make sure you don't miss something out by clicking on Part1 and Part 2

The restaurant I choose to write about today is the "SURF HOUSE" in Barcelona.

This location is directly located at the beach. And as the name is already giving you some idea, it is a surf spot and a restaurant decorated with all things relating to surfing.

You have a beautiful view from the restaurant facing the beach life of Barcelona.

The restaurant itself is offering a big menu  where you can choose from breakfast, lunch, afternoon snack and dinner.

We choosed an Avocado Toast with smashed avocado, feta cheese, basil and cherry tomatoes. Beside this great high quality fresh dish I choosed a drink called Lime Juice, with mint and a bit of sugar. I can really recommend it, also they offer a smoothie of the month, just ask for the fruits at the moment. Also you can do your own healthy creation of course.

As it is a surfer spot, they also offer activities - which you can book. For example SHB SUP Yoga & Pilates and afterwards you can get your well deserved smoothie or Mojito. On some days they also have live music with special cocktail prices.

And don't miss the free paddle surf, when hitting the 15 Euro bill you can borrow paddle board for 45 minutes free. Check the website for actual activities.

I decided to do a series of places to go for foodies in my blog, when coming to Barcelona. Part 1 was uploaded last week, if you haven't read it yet make sure you don't miss it by clicking on: Part 1 Barcelona, my insights for you.

When traveling to Barcelona, one thing you should not miss is to visit a fish restaurant. 

The best experience I made when it comes to eating fish in Barcelona was at the amazing ARROS I PEIX.

The restaurant caught my attention, when we were walking down via Laietana. The restaurant has a big wide glass front, where you can directly take a look at their fresh In-House fish market.

The friendly service team saw that I wanted to make a picture of the fish market from the street and welcomed me to have a look in the restaurant to make a better picture. It has just been opened up, so we decided to make a reservation for the evening.

As we arrived on the evening we were greeted by the friendly service personal with a glass of bubbly Cava. Then the service member explained to use the In-House fish market. You can choose from the fresh fish presented what you like, which I really loved because you can taste from every fish a bit. You pay by the weight, the fish portion you choose will be weighted in front of you so you can also add some more or even less which is a great unique service.

This is exactly what makes the concept so great, you have this impressive fresh fish market, while having your glass of Cava you get everything explained and then you can decide what you would like to have and how you would like to have it cooked.

Also they offer a menue where you can order fantastic side dishes and of course they have a wine list where a service member will help you out with the decision which wine to pick for your dish.

The restaurant itself is really modern and threw the glass front you can directly see the street, which makes a really nice atmosphere. 

We had a great time there and the best fish I eaten so far in Barcelona, I can only recommend this place for a dinner or lunch. Check the opening hours for more information on the homepage of the restaurant.

I talked to the director and he was mentioning that they have some more restaurants in Spain. You can also find out on their homepage

Hey guys,


as mentioned in my last posting already Barcelona is a place for foodies. There is really everything you need and wish for in this wonderful city. 

So I decided to start my series for foodies in Barcelona with a wonderful place- called "Brunch & Cake".


As the name is already telling you, the perfect place for spending a nice long morning with brunch and cake and your loved ones!

As I love superfoods and love healthy breakfast I felt totally in love with this place. The philosophy is that they use wherever possible organic or locally sourced ingredients for their dishes. You can definitely feel this passion behind the concept in every detail of your stay. Keep the great work up Manex & Team!

The idea behind the concept, which they describe as "in grandmother we trust". Which means explained : make absolutely everything by hand and slowly, with care. Be
honest and use the best possible ingredients. And this you can taste for sure in their high quality dishes they serve.

I loved how they present and decorated the dishes, this is what I would call "foodporn". Totally insane, make sure you also check one of the smoothies they offer. Mine was looking like a sparkling unicorn was falling into it :-) I posted a video of it on my fb page

They don't do reservations, so better be an early bird as it is really popular. We got there at 10.00 and luckily caught the last free table.
