Parmigiana di Melanzane - veggie, healthy and yummy Italian! My insight recipe for you!

Parmigiana di Melanzane ! Veggie Lasagne !

it is time again to share a recipe with you. Im in love with Italian food and this is one of my many favorites.

Most of the time you find that dish under the name "Parmigiana di Melanzane". I would call it the ultimate veggie lasagne.  The main part of this dish is called "Melanzane" in Italian, or eggplant, it is a Southern Italian recipe as far as I could check on the culinary history.

The culinary history says that the eggplant reached Southern Italy by the 9th century CE. Arabs brought the fruits along and thanks to the fearless foodies in the Calabrian and Sicilian regions of Italy the Italians loved to cook and also planted this funny egg-shaped product.

Random Information. Eggplants were also used as Medicine fighting asthma and dental issues.

Enough about the history lets get started !

Ok, here is the deal. It might take you some more time of preperation  but a happy outcome is worth waiting for, right?

Ingridients for 2 persons:

2 eggplants

500 g Tomatoes

1-2 table spoons olive oil

1/2 handful of basil

150 g parmesan cheese

2 mozzarella cheese

1 small onion

1 1/2 garlic (as you like)

Preheat your oven about 180 Degrees. And prepare a baking dish (I place a little bit of olive oil in the baking form to make sure nothing sticks on it).

Lets start to get the eggplants prepared. There are more ways to prepare them, for me this works the best. Slice the eggplants in thin pieces. Salt the eggplant slices from every side and put them all together in a bowl and place something heavy above the slices. Let it rest for 10 minutes.
After 10 minutes you can check and see that the eggplants have lost their water.
If so you can take the slices out of its own water and make sure (really important) to get rid of the salt. Best way to get rid of the saltiness is to put every slice shortly  under running water and tab right after every slice after doing so.

This was the part that take the longest, but as said - you wont regret the prep work when tasting this ultimate yummy Italian dish.

Meanwhile while the eggplant is resting you can prepare the sauce.

Put some olive oil in a cooking pot and roast the garlic and the onions quick - make sure not to heat it up too quick as garlic gets burned really fast.

After that add the tomatoes into the cooking pot and stire everything. You can add some pepper and salt depending on your choice, also a bit of red wine is possible. Make sure if you add wine to heat it up a bit so the alcohol gets cooked away and it doesnt taste intense red wine. Add the basil at the end and let it cook at lower heat for about 15 minutes.

While the tomatoe sauce is cooking you place in a pan only a sprinkle of olive oil and place the eggplant slices in it. Make sure not to put too much olive oil as the eggplants are tending to suck up the oil too much. Sear the eggplant slices from each side for about 4-5 minutes (medium heat) till they get a nice tan on each side. Put the slices on a plate when finsihed.

When your sauce and eggplants are ready start to layer the ingridients in the baking form.
Start with some tomatoe sauce at the Bottom and put layer above the eggplant slices and Mozzarella cheese slices above.

Finsihing with parmesan the casserole.

Place the casserole for about 20-25 minutes in the preheated oven (180 degrees). Right after putting it out of the oven let the casserole rest for about 15 minutes. You can serve it warm or even cold. Perfect match for the "Parmigana Melanzane" is red wine and some nice baguette.

Hey guys,


as many know German winters can be hard, so we decided spontoneus to drive to the airport and check out which destination has the ultimate summer guaranteed.

Lucky we found Dubai. Lucky enough again to find out that there was an opening of a brand new W Hotel at the Palm Jumeirah in Dubai. Im a huge fan of the W Hotel concept so the choice was pretty easy to make.

From Munich you only fly around 6 hours and you arrive in paradise with sun and beach. An insider tip: make sure to check out that you catch a flight on the A380 it is just the best comfy way to travel Dubai.

The W hotel openend up in January 2019, so it is brand new. It offers about 292 Rooms and 58 suites. We stayed at a the fantastic suite with a breathtaking and 100% fantastic ocean view. I enjoyed relaxing in the day beds on the balcony.

The concept of this luxury hotel is unique as always with the W Hotels. At the so called "WET"deck is a DJ whichs offers great sounds during the day, they also offer events as ladies day or brunchs. Make sure to check those out.

Talking about the brunch, makes me come to the ultimate food guide for Dubai. Honestley I didnt leave the hotel :-) I enjoyed so much those great restaurants and bars. For one week it is just perfect to make a dine around within the hotel. The beach is just perfection, I loved to stay at the beach with a great view towards the skyline of Dubai.

First to mention, there is also a fitness studio inside the hotel which offers a personal trainer - to stay in shape.

What I recommend you to do is to stay at a cabana at the beach, it is just wonderful to watch the scene from there.

The breakfast is in a buffet form and is offering anything you can wish for. I will let the pictures speak for themselves.

Make sure to check also the restaurant LIV out for the buffet international dining experiences, it is unbelievable what the team is creating. There is nothing more to wish for.

When you are hungry during daytime you can choose from a menu on the pool and the beach.

To have the ultimate sunset experience, go to the amazing SoBe bar. They offer also amazing Latin Snacks as Appetizers and for sure some great sun downer drinks.

If your more into Italian food, check out Torno Subito. I loved the truffeld dishes. Simply delicious with a special modern twist also open during day time. Really instagramable place for taking the perfect foodie pics.

Now to my special recommondation. Not only the entrance is spectacular: Akira Back.

Gio, the chef, confinced me to try fish (as Im normally not so into fish dishes) and I can tell you it was the best decision. We had an innovative, sensational and tastful dinner experience with him. Please check out my Instagram highlight for more video content.

There are so many great options on the menu, please taste them all :-) For me the tuna pizza is a must to check out!

The restaurant is modern and the view to the skyline from the bar is insane. Make sure to come by, even if you are not staying at the hotel.

Lets go to the beach! Noordwijk aan Zee, my guide about food and where to stay! 



what I loved about Netherlands is that you have so many options to go to the beach. As we were staying in Amsterdam before I did some research on the internet and found a great city called Noordwijk aan Zee. It is about 30 minutes distance to drive from Amsterdam.

After our stay in the city it was just relaxing so spend some days in this wonderful region. 

Where to stay in Noordwijk aan Zee?

I prefer staying most of the time in small hotels. So after my search I found just the perfect hotel to stay in Noordwijk aan Zee - called "Villa de Duinen". The Villa was built in 1902 and has been modern renovated. The design ist minimal and modern. The Villa de Duinen, as the naming is already telling, is only 5 minutes walk distance from the beach.

The hotel offers only 11 rooms in 3 different categories. They all offer super comfy luxury beds, which gives you the perfect sleep for your day activities. Also they have luxury bath rooms with care products of my favorite brand called "Rituales". 

If you have a rainy day dont worry, included in the pricing of the room you get entrance to the "Azzuro" Wellness & Spa. Just across the street we spend a wonderful Relaxing day of fitness and wellness.

The hotel is located around 2 minutes walking distance  from the city centre, where you can find many nice shops and restaurants. 

The Villa is also well known for its own restaurant. Its one of the best restaurants I have been so far. Make sure to reserve a table for dinner as it is well known in this region.
